Shrimp Tacos with Mango Salsa

Ingredients:
3 T mayonnaise
1 1/2 T Low Country Hot Sauce
2 T Smoke City BBQ Rub
1/2 t. sugar
3/4 C fresh cilantro
1 pound fresh medium shrimp, peeled, de-veined and halved
1 14-ounce coleslaw mix
1 mango, peeled and sliced
1/2 small red onion
kosher salt
2 t vegetable oil
12 small soft taco shells
Directions:
  • In a food processor pulse mayonnaise, hot sauce, juice of one lime, sugar and 1/4 cup cilantro until smooth.
  • Place shrimp in a bowl and coat with Smoke City BBQ rub, set aside.
  • Rough chop remaining cilantro, toss with slaw mix , mango, red onion and dressing.
  • Heat vegetable oil in a skillet over med high heat. Add shrimp and cook til pink about 3 minutes.
  • Fill the taco shells with cooked shrimp and top with mango slaw.
  • Serve with lime wedges
